Stuffed Peppers

Ingredients
1 lb ground pork
3 green bell peppers
5-6 stems of parsley, chopped
1/2 red onion, chopped
1 tsp salt
2 TBS EVOO
1 pinch thyme
1 clove garlic, minced
1 pinch grated ginger root
2 cups cooked rice
2 stalks green onion
1 1/2 cups water
Directions
In a pan, sauté onion & 1 TBS EVOO on medium heat.When just about soft, add in ground pork, 1/2 tsp salt & 1/2 of a garlic clove.When pork is cooked, remove mixture from pan & set aside.
Then put 1 TBS EVOO, green onion, ginger, 1/2 tsp salt, thyme and remaining garlic in pan.After sautéing the mixture, add 1/2 cup water to deglaze pan.
Add 2 cups cooked rice & 1 cup water to mixture in pan.Add back in the pork/onion mixture until thoroughly mixed.
Clean bell peppers & core.Then stuff with prepared mixture & bake in 350°F oven for 30-40 minutes depending on size of pepper.
