Roasted Pumpkin Seeds

Pumpkin seeds are a great pick-me-up snack packed with B-complex group of vitamins thiamin, riboflavin, niacin, pantothenic acid, vitamin B-6 and folates; minerals copper, manganese, potassium, calcium, iron, magnesium, zinc and selenium; vitamin E antioxidants; fiber and essential amino-acids tryptophan, and glutamate.

Roasted Pumpkin Seeds


  • 1 1/2 cups Pumpkin seeds

  • pinch of Sea Salt

  • 2 Tsp Avocado or Olive Oil


  1. Preheat oven to 300°F.

  2. Clean seeds & shake dry. Don't blot with a paper towel, they'll stick!

  3. Toss pumpkin seeds in a bowl with oil and salt.

  4. Spread pumpkin seeds in a single layer on baking sheet.

  5. Bake for about 30-40 minutes, stirring occasionally, until golden brown.
