One Skillet Beans & Rice

Yield: 2-3 servings
Ingredients
2 cups cooked brown rice
1 1/2 cups cooked black beans
1/2 medium onion
1 large tomato
1 tablespoon extra virgin olive oil
6 sausage links
Salt & pepper to taste
Directions
Chop onion and dice tomato. Follow package directions to thaw/warm sausage & then cut up into bite-size pieces.
Warm large skillet on stove over medium heat. Add olive oil. When oil's hot add onions & cook until translucent. Mix in sausage, beans & tomatoes.
Now to season - I cover the surface of food with salt & pepper. Hubby always says it looks like I'm putting too much, but the taste is always good! My rule of thumb is to put on twice as much as I think it should have & that works for me.
Stir a few times while heating. If it seems to be getting dry before the tomatoes cook down, slowly add some water to keep moist.
If using leftover rice like I did, you can stir it in to the skillet to warm or nuke it in the microwave. Plate & enjoy!
