Deviled Egg Salad
When it's too hot to cook, egg salad is great! I adapted my deviled eggs for sandwiches & it was gobbled up. You could also put it on a bed of lettuce & add other toppings. Hope you enjoy it as much as we do!

Yield: 2-4 sandwiches depending on bread size & how stuffed you like it
Ingredients
4 hard boiled eggs per serving
1/4 tsp ground ginger
1/8 tsp white pepper
1/4 tsp ground mustard
1/2 tsp salt
4 tsp mayo (Mom's recipe)
Directions
Hard boil eggs - this is the best way to do them here. Once the eggs have cooled, peel & chop up to your preferred chunkiness. Stir in mayo. I liked 4 tsp with this. You might like more or less, depending on how dry or creamy you want it. Stir in seasonings to taste. Make a sandwich, salad or eat it straight from the bowl!
