Cherry Pecan Muffins & Crumble
Looking for a breakfast muffin that packs a punch? Look no further! With cherries, pecans, flaxseed, and quinoa this muffin has it all.

Yield: 18 muffins or 12 muffins & leftover can be turned into a crumble for a nutritious dessert.
Ingredients
2 cups cooked quinoa (can be done ahead of time)
1 3/4 cups flour mix*
1 tablespoon flaxseed meal
3/4 cup packed dark brown sugar*
1/2 cup pecans, chopped
2 1/2 teaspoons baking powder (corn free)
1/2 teaspoon non-iodized salt
3/4 cup milk or alternative
1 large egg or alternative
1/4 cup oil or butter, melted (I use Light Olive Oil) + some to oil the muffin pan
1 cup cherries, chopped
1 tsp pure maple syrup or honey (optional to taste)
White rice flour to dust muffin pan
Flour Mix: You'll have leftover flour mix. Throw it in your weekend concoction jar!
1 cup sorghum flour
1/2 cup white rice flour
1/2 cup brown rice flour
2/3 cup tapioca flour
1/2 cup arrowroot
Crumble top:
2 tablespoon flour/flour mix
2 tablespoon sugar (I used brown in keeping with above ingredients)
3 tablespoons cold butter
With pastry blender mix together until butter is roughly pea-size.
*Make your own brown sugar for corn free by adding blackstrap molasses. I usually eyeball it, but would suggest about a tablespoon for this recipe.
Directions
Preheat oven to 350°F. Oil or butter muffin pan and dust with white rice flour. Be sure to tap out the excess. Whisk together dry ingredients. Mix wet ingredients in a separate bowl, combine with dry & whisk together. Bake 25-30 minutes. Muffins will be done when toothpick comes out clean or firm & springy to the touch. Let cool in pan for 5 minutes & then remove and finish cooling on a rack. Store in an airtight container. These muffins also freeze well to pull out in a pinch.
For 12 muffins & crumble: Follow above and then pour leftover batter into an oiled/dusted baking dish. I used a medium, round casserole style dish. Sprinkle on crumble top and place dish on oven rack next to muffins or bake separately. Baking together may vary the time slightly. The crumble is done when toothpick comes out clean.
