Butternut Squash & Quinoa Dinner
A friend brought us dinner recently when Hubs had surgery. It was so nice not having to think about fixing dinner after a long day. We've had occasions in the past that meals were offered and we usually decline. Due to our menu limitations most people don't want to tackle making a meal.
And we get it. It's challenging for us and we live it every day. This friend was willing to make a safe meal for us and succeeded! It was a simple vegetarian dinner and delicious.
I love simple meals that don't need much prep time. This definitely fit the bill. Missed getting a picture of it, so you'll have to use your mind's eye!

Ingredients
1 onion
1 medium butternut squash
Fine sea salt
Black pepper
3/4 cup water or broth
Directions
Preheat oven to 400°F.
Cut squash open and scrap out seeds/strings. Cut up onion.
Sprinkle onion and squash liberally with sea salt and pepper.
Roast for 45 minutes.
Skin the squash and put in bowl with onion. Add water or broth to preferred consistency.
Mash with potato masher, then use an immersion blender to puree. Add salt/pepper to taste. Spoon over freshly made quinoa.
Steam your favorite veggie. Serve and enjoy!
