Black Bean Brownies

Black Bean Brownies

Yield: 16 servings


  • 1 3/4 cups black beans, cooked & drained

  • 2-3 large eggs

  • 3 tablespoons light olive oil (or lard)

  • 1/4 cup cocoa powder

  • 1 pinch non-iodized salt

  • 1 teaspoon pure maple syrup

  • 3/4 cup sugar (or 1/2 cup honey)


Preheat oven to 350°F. Lightly grease an 8x8 square baking dish.

Puree black beans. You may need to add a little water to keep from being too pasty.

Combine all ingredients and blend until smooth; pour batter into baking dish.

Bake in preheated oven for about 30 minutes or until the top is dry.

Note: If you like your brownies cake-y use 2 eggs. 3 eggs will make them gooey.
